Port Said to Cairo is a three-hour drive each way, which makes a single day brisk but doable. Staying overnight changes the character of the visit completely: you travel once, you see Cairo in cooler morning light, and you finish with a proper evening in the old city rather than a mad dash back to the ship.
Day one covers the pharaonic Egypt that most guests come for — the Giza Plateau and the Egyptian Museum. Day two turns to the Islamic and medieval city: Saladin's Citadel and the Muhammad Ali Mosque above it, and then down into Khan El Khalili, the bazaar that has traded in the same streets for centuries.
